The adage goes: “Breakfast is the most important meal of the day.” I’m thinking it should be changed to “Breakfast is the most kick-ass meal of the day.” I’m a bit obsessed with breakfast and brunch. My last dinner party was themed “breakfast for dinner” and my husband experiences pure joy when he has pancakes for supper. Apparently, many of you agree because this week’s most popular link was Pumpkin Sunrise Muffins from Gluten Free Spinner. Pumpkin muffins are my favorite muffin but using cherries instead of raisins and adding coconut and pecans may qualify Mary as a genius! A food genius anyway, if there is such a thing. If there isn’t, I say we make one.
This week’s features stay in line with the breakfast theme (obsession noted above) with these Watermelon Seed Flour Waffles from Forest and Fauna. I did not know (and I hope many of you didn’t either) you could make flour from watermelon seeds. Or honestly that watermelon seeds were tasty to eat and readily available. Thank you for educating me. I am so excited to experiment with it!
I am also featuring these Chocolate Chip Pancakes from Sandi’s Allergy Free Recipes. I have said it over and over and I will keep saying: Everything tastes better with chocolate chips. Everything.
