Super Duper Peanut Butter Cup Popcorn #SundaySupper

Super Duper Peanut Butter Cup Popcorn is a winning party snack!

New York City is weird. There I said it. It’s weird. Now after 22 1/2 years you would think that this would have become my new normal.

In many ways it has. But once and awhile, New York’s strangeness stands out and you just can’t help but take notice. This week was one of those weeks.

Snowmaggedon 2016 blanketed the Northeast with record breaking snowfall. It ended with 27 inches in Central Park. Epic right?

Well, the night of the storm we decided to go out to dinner. Yes, I actually said OUT to dinner. It was my husband’s idea. My husband grew up here and often has no concept of how the rest of the world works.

So we laced up our boots and went outside. There was already two feet of snow and it was still coming down. However, the sidewalks had recently been shoveled and so it was no problem to get to the restaurant across the street. (My husband’s learning that his only chance of getting me out of the house in bad weather is pitching the restaurant across the street.)

Not only was the restaurant open but it was crowded! Two feet of snow on the ground and yet the place was full. Full!

Every time I looked out the window, I saw someone walk by. Maybe it’s me, but doesn’t two feet of snow qualify us to stay home? Apparently not, since the subway was running.

The next day, while trying to develop a recipe for a game day popcorn, I was watching videos of women making caramel corn. In video after video, these women said to put the popcorn in a large bowl and I watched over and over again as each one tossed the popcorn in a salad bowl.

However, I live in a New York apartment, I have no such large bowl. I called my mother with my dilemma. “Don’t you have a salad bowl? Well, you just use a dip and chips bowl. Don’t you have one?” “Uh no. Where on earth would I store that?”

Finally, I remembered one of my cooking school instructors saying she used pots as mixing bowls when she lived in the city. So as absurd as it looks, I used my soup pot.

Magically, we all seem to have one of those. And just to make the scene even more ridiculous, I didn’t have tongs so I used fancy serving spoons reserved for dinner parties.

FYI, this was their maiden voyage. I’m left wondering if what separates the mega-rich from the rest of us in Manhattan is salad bowls. I used to think it was the number of bathrooms but maybe the uber-wealthy all have salad bowls too.

Ingredients

10 cups popcorn (22.5 ounces)*

10 ounces Reese's Peanut Butter Baking Chips (1 bag)

12 ounces semi-sweet or milk chocolate chips (1 bag)

8 ounces Planter’s cocktail peanuts or Reese’s Peanut Butter Cups Minis or both**

i]*If you want to buy the popcorn, Ashton Swank of [Something Swanky recommends Boom Chicka Pop (found at Target). Since she literally wrote the book on popcorn, 75 Creative Recipes for Everyone's Favorite Snack Party Popcorn , I will take her suggestion.

If you are going to pop the popcorn, use 1/2 cup kernels and 3 tablespoons of coconut or peanut oil. There are great stovetop instructions on the Kitchn for those of us who don’t have popcorn machines.

**Reese’s Peanut Butter Cups Minis ARE NOT GLUTEN FREE. However, regular Reese’s Peanut Butter Cups are. Strange but true, see the Hershey website . So either omit them from the recipe or cut up some regular ones to make this recipe gluten free.

Instructions

  1. Pour the popcorn into a large bowl. Pick out any stray kernels or broken bits. Add the peanuts, if using.
  2. Melt the Reese's Peanut Butter Baking Chips in the microwave. Tip: Set the microwave to 50% power. Only heat until they are almost melted. They will continue to melt as you stir. I needed 45 seconds and my microwave is 1200 watts.
  3. Pour the melted chips over the popcorn and toss until the popcorn is thoroughly covered.

  5. Place a long sheet of wax paper on the counter or table and spread out the popcorn on it.
  6. Melt the chocolate baking chips in the microwave. Tip: Set the microwave to 50% power. Only heat until they are almost melted. They will continue to melt as you stir. I needed 55 seconds and my microwave is 1200 watts.
  7. Pour the chocolate into a plastic storage bag or disposable piping bag and snip off the end. Tip: Alternatively you can melt the chips directly in this bag.
  8. Drizzle the chocolate over the popcorn. Sprinkle with the minis.

  10. Let the chocolate set before breaking apart and returning it to the large bowl to serve.

  1. You had me at peanut butter/popcorn. How could you go wrong with this combination !!?? And I love the fact that you mixed it in a pot. I guess us who live in a little bigger place than a Manhattan Apartment don't think of those things. Here in Portland, Oregon if we get a couple of inches of snow the whole city shuts down LOL Thanks for sharing. Stopping over from Best of the Blogosphere.
  2. Holy cow this must looks amazing! Popcorn is my favorite "healthy" treat - peanut butter cups are my favorite "unhealthy" treat. Thanks for bringing me some balance :) Glad to have you link up at #HappinessIsHomemade this week!
  3. In NC we had the complete opposite experience with winter storm Jonas -- there was maaaaybe 2 inches of snow on the ground and everything was shut down for the weekend. My husband and I walked to get take-out and the only open restaurant was a little Chinese place that told us the lunch specials were canceled due to the "storm." I've lived here for a few years, but it still boggles my mind how a smidge of snow can cripple a whole city. Your peanut butter cup popcorn looks divine! I pinned it on Pinterest. Oh and I'm stopping by from the Wednesday Showcase link party! Alex from Sew, Simmer, and Share recently posted...Creamy Carrot Soup with BaconMy Profile
  4. Oh my gosh I just loved your post! Yes, 2 ft of snow = staying indoors. I have definitely used my stock pot for mixing popcorn before - it's perfect! As for fancy serving spoons... I don't have any of those. But I'm sure they worked better than tongs would have anyway. I'd probably have sacrificed clean hands in this situation.
  5. Great recipe. Love your idea of using the soup pot. Your photos are so great that I want to pull off a handful of this off the page.
