Growing up my favorite breakfast was always Quaker Maple & Brown Sugar Oatmeal. I’d switch to different cereals now and then, after all, variety is the spice of life, but I’d always come back to my Maple & Brown Sugar.

So imagine my delight when I was approached by Quaker to develop a recipe using their new gluten-free oats. Now imagine the absolute euphoria I felt when I learned they were also making a Gluten-free Maple & Brown Sugar Oatmeal! I swear I nearly had an aneurysm.

Yes Virginia, Quaker is launching gluten-free oats nationwide this month! So if you can’t find them in stores yet, the wait is almost over. I think I hear the angels singing!

They are offering three varieties: 18 oz. Quaker Quick 1-Minute Oats and Quaker Instant Oatmeal in both 10-ct. Original and 8-ct. Maple & Brown Sugar flavors. That’s right I said it: Gluten-free Maple & Brown Sugar Oatmeal!

Over the years, I could no longer enjoy oatmeal and my morning routine became dominated by eggs. The incredible, edible egg. Not so incredible when that’s all you eat.

So for the first time in what seemed like forever, I ate a bowlful of that sweet yet heart-healthy yumminess. And honestly, it was better than I remembered.

Was it always this good? No wonder it was my favorite. And apparently, I am not alone in my love of Maple & Brown Sugar since, out of all their flavors, Quaker choose to make it gluten-free.

Ingredients

16 tablespoons butter (2 sticks)

1/2 cup packed brown sugar

1 teaspoon vanilla extract

3 cups Quaker Gluten Free Quick 1-Minute Oats

1/4 cup water

9 ounces white chocolate*

4 tablespoons maple syrup

2 tablespoons heavy cream

1/4 teaspoon salt

*This works much better with chocolate bars but if you must use chips, use 1 1/2 cups white chocolate chips.

Instructions

  1. Line a 8 x 8-inch baking pan it with 2 sheets of parchment paper in a crisscross pattern. Make sure the paper overhangs the edges of the pan so you can easily lift out the bars when they are done.

  3. In large saucepan, melt the butter over medium heat. Stir in the brown sugar and vanilla. Then add the oats and water. Stir until thoroughly combined.
  4. Cook covered over medium/low heat for 15 minutes. Stir every 5 minutes to avoid sticking.
  5. Uncover and stir until all the butter is absorbed and all the ingredients are thoroughly combined.
  6. Press two thirds of the mixture into the bottom of the prepared pan. Tip: I used the back of a measuring cup. Set aside.
  7. Place the white chocolate, maple syrup, heavy cream and salt in a medium bowl set over simmering water. Stir slowly and constantly until thoroughly combined. (The mixture will be thick and syrupy.) Pour the chocolate over the crust in the pan and smooth with the back of a spoon.
  8. Crumble the remaining oat mixture on top and gently press. Cover and refrigerate at least 2 hours. Bring to room temperature before cutting into 16 squares.

  2. My favorite growing up was cream cheese and grape jelly on toast! I still have it once and awhile when I'm feeling nostalgic! it brings back some pretty good memories!
  3. For breakfast, my favorite option would be poached eggs on toast. However, I do love oatmeal. Pumpkin spice oatmeal made in the crockpot is my favorite flavor.
  4. One of my favorite breakfasts growing up was oatmeal! Now...after being diagnosed with Celiac disease, I am so glad Quaker has gluten free oatmeal!

  6. Oh my... these look gorgeous & so easy to make! Thanks for sharing! While growing up, porridge was unknown to me (I live in France). I had only heard of it from my Dad's scout outings memories and was doubtful about it... I usually had chocolate flavoured breakfast cereals (a French brand that does not exist in the US, as far as I know) with a small glass of orange juice, without pulp and freshly squeezed by my Mum! (yes... I was that demanding!) For my health's (& palate!) sake, I'm glad I now have given up those chocolate cereals and have porridge at least twice a week!
  7. Growing up, my favorite breakfast was tied between cream of wheat with honey and fruit, veggie omelettes with apple cinnamon oatmeal, and blueberry pancakes with syrup. Yum.

    1. I know it took forever, but they wanted to be sure they got it right. After all, they are putting a 140-year reputation on the line. They cost much less than what's already out there (worst case $3.99 for 18 ounces), especially in Target or Walmart. :)
  9. I never used to eat breakfast growing up. I can't recall ever having breakfast from kindergarten through high school. There was no way to get me to consider it. But now I always have breakfast!
  10. As a kid I always wanted sugar-laden cereal or a poptart. I never liked oatmeal as a kid, but I eat it regularly as an adult.
