One of the biggest lessons I’ve learned while embracing paleo lifestyle is the old boy scout motto “Be prepared.” Every day I ask my husband around 6:30 or 7 “what do you want for dinner?” This is followed by a lengthy discussion of where we are going to get delivery.

I realize this is horrifying to most of you, but I assure you, it is the norm in NYC. Clearly, though this habit will no longer do when you are paleo. There is only so much you can stand to eat from the same two paleo-friendly places. Be prepared.

So in the spirit of becoming organized, I have realized I have two items (both ice creams) coming up this summer that require special extracts.

You see, us bloggers make an editorial schedule so we have a clue what we are doing. That being said the schedule changes constantly because, well, life happens but nonetheless, it serves as a guide.

Anyway, I know I am going to need lavender extract for a Honey Lavender ice cream and pistachio extract for a Cherry and Pistachio Ice Cream Cake. Exciting, right?

So after going to Amazon, I realize these extracts don’t exist in a paleo-friendly version. Argh!

But I need them so what to do? Make them, of course! Also the blogosphere is flooded with people singing the praises of making your own vanilla extract.

So while I was at it, I made that one too. I’m thinking I also should have made orange and lemon but I can regret that later.

As you may or may not know, extracts are made with vodka. So this raised the question is vodka even paleo-friendly and if so, what brands? Well the answer is yes and no.

Vodka made from paleo-friendly ingredients like coconut, potato, and grapes is a much better alternative than vodka made from non-paleo ingredients such as wheat, corn, grain, and rye.

I found this article from Primal Feeding. It was great for helping me learn what is in all the brands. It is a very comprehensive list. It includes all kinds of brands I’ve never even heard of!

Ingredients

For Vanilla Extract

1 cup paleo-friendly vodka

4 vanilla beans

For Lavender Extract

1/4 cup paleo-friendly vodka

2 teaspoons food-grade lavender

For Pistachio Extract

1/4 cup paleo-friendly vodka

1/4 cup shelled pistachios, toasted, skins removed

1/4 vanilla bean

Instructions

    For all extracts
  1. Place all the ingredients in a bottle (preferably a dark one like this . Yes, I realize the ones in the photos are not amber but clear bottles make better photos).
  2. Shake well.
  3. Store in a cool, dark place for 6 to 8 weeks.
  4. Shake the bottle once a week.
  5. After 6 to 8 weeks, strain, return the liquid to the bottle and store in a cool, dark place.
  6. Tips: 1. Save the vanilla beans to reuse. 2. To remove the skins from the pistachios, blanche them and then rub each between your fingers with a dish towel. Toast skinless nuts on the stove.
